Ingredients
4 ears of corn, kernels cut from the cob
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 jalapeno chili, seeded and minced
2 tbsp fresh cilantro, chopped
2 tbsp red onion, minced
1 lime, zested and juiced
sea salt to taste
Let’s Get Started
Step 1: Mix all the ingredients into a bowl.
Step 2: Serve as a side salad or accompaniment to tacos, grilled chicken, or steak.
Variations
grill the corn before cutting off the kernels
add chopped tomato
add chopped mango or papaya
add black beans
substitute vinegar for lime juice
substitute basil, oregano, and/or thyme for cilantro
